I do agree the nature of this kind of cooking are very heavy and oily to NZ standard. Sichuan province are located on the south western of China surrounded with mountains. because of the geographical environment and high humidity, Sichuan people believes by taking stronger (heavier taste) and peppercorn (numbing) it helps releasing inner body heat. I do want to make the changes to suit individual taste bud, please do inform our waiting staff when you order next time if you do not wish to have it too oily.
